IMHO pkg-config is a totally acceptable dep. Unlike e.g. cmake which is
massive, pita, and a massive pita, pkg-config is small, standard, and
the default macros let you override the flags. If you happen to build
on a very old Linux box and don't want to override the flags manually,
installing pkg-config is not a big deal (unlike cmake, again).
